Frutas y Verduras Mission Statement
We are culinary & hospitality professionals, hosts, travel enthusiasts and culture mavens who share a deep appreciation for Mexico’s regional plant foods. Each of us is committed to continually learning about the traditional uses, cultural value and innate wisdom rooted in these foods.
Through the in-depth experiences we offer, we communicate what we learn. In keeping with the time-honored traditions of Mexican cuisine, our focus is on regional and seasonal ingredients and flavors, and the cultural significance –past and present– of these plant foods.
We hold in the highest esteem the people who plant and labor in the fields, who forage in the countryside and then bring their harvest to market using just their hands.
To those who preserve the use of these heritage ingredients and present them with love – from the humble women of the pueblos to the famed chefs – we wish to show equal respect and gratitude.
We intend to do our parts in supporting and nurturing Mexico’s valuable plant food heritage at every stage, from field to table.
In our tours and classes, we focus on giving local vendors our business. Their work is what drives our mission.
Further, a percentage of Frutas y Verduras net profits goes into a fund from which we give to organizations doing work in Mexico in areas of food security and sustainability.
